Saffron Chicken with Apricots



serves 4 each serving 6 weightwatchers points

pinch of saffron threads
250ml hot chicken stock
low fat cooking spray
1 large onion, sliced
2 garlic cloves sliced
2 medium (155g) skinless chicken breasts chopped into bite sized pieces
teaspoon ground cumin
teaspoon tumeric
teaspoon ground corriander
teaspoon ground paprika
75g dried apricots, halved
150g canned chick peas
175g cous cous
1 tablespoon chopped fresh mint
1 tablespoon chopped parsley
salt and pepper
50g flakes almonds to serve


stir the saffron threads into the stock and leave to one side
saute the onions and garlic for 3-4 mins unitl they start to soften
add chicken and stir for 3-4 minutes, stirring occasionally
add spices and stir to coat the chicken
pour in stock and saffron and add the apricots and chick peas
simmer for 15 - 20 minutes
meanwhile cook the cous cous according to instructions ( about 10 minutes)
check the seasoning of the chicken and add fresh herbs
serve on cous cous with toasted almonds sprinkled on top
